Tasmania’s history is steeped in the blood and sweat of the convict workforce. Roads, ports, and even the prisons that held them, were built by men and women transported from the United Kingdom. Bringing with them the art of distillation, they are to thank for whisky in Australia, even if we’ve made it our own since then. A whisky to drink whilst contemplating the importance of the past.
